Yield : 50hl/ha, below the maximum yield allowed by the AOP (55hl/ha).
Harvest selective sorting. Destemming with new generation destemmer (Oscillys from Bücher) then crushing. Direct pressing with pneumatic press. Separation of pressed and free-run juices (after tasting). Cold static settling for a minimum of 48 hours. 3 weeks mono varietal fermentation in stainless steel tanks (temperature of 15°C).
Stainless steel tanks aging over fine lees until Christmas. Clarification by racking and filtration before bottling.
A symphony full of nuances and variations. The score starts with the blending of several times: the elegance of citrus alternates with the freshness of red fruits. The next measurement offers an elegant approach, round and rich for a gentle first contact. The finish, as long as intense, wanted voluntarily straighter is the characteristic signature of Fontenille wines. Wine raced and balanced.
