2016  Cuvée Fontenille Red

  • Grapes

    Black Grenache (70 %) and Syrah (30 %).

  • Terroir

    Clay, limestone and marl soils facing south. Located at the bottom of Luberon mountain.

  • Winegrowing

    Currently converted into organic farming. Manual harvests, early in the morning, after maturity control and berries tasting. Grapes from a selection of parcels. Rigorous green pruning from bud break to harvest (disbudding, thinning, leaf removal). Yield of 25hl / ha, below the maximum yield allowed by the appellation (55hl / ha).

  • Winemaking

    Transport of harvest via vibrating trucks after a first sorting on the parcel. 2nd manual sorting on vibrating sorting table at the entrance of the winery. Destemming and then crushing before gravity incubation. Short cold pre-fermentation. Mono varietal fermentation under controlled temperature in concrete tanks. Post-fermentation maceration during several weeks before juices are poured and marcs pressed. Malolactic fermentation before winter in both concrete and steel tanks.

  • Aging

    Concrete and stainless steel tanks for more than 12 months.

  • Tasting

    A generous and solar nose offering notes of black fruits (blackcurrant, blackberry, cherry), very intense and seductive, inviting to penetrate the generous kingdom of Grenache. The mouth is fleshy and silky, with elegant tannins. The research is here to variation and elegance. Syrah takes back its rights by an alternation of fruits and spices guaranteeing a nice complexity to this wine. A potential of guard similar to its final: long!

    food pairing

    To contrast with this full bodied wine, it is appropriate to associate relatively powerful dishes and dare to take risk: boar auburn with chocolate and red berries, lamb roasted with thyme, roast duck with ceps ... Do not be mistaken, if this red guard knows perfectly how to marry with powerful meats, it also knows how to harmoniously accompany delicate desserts: black forest or fondant chocolate with red fruits.
