2017  Cuvée Fontenille Rose

  • Grapes

    Black Grenache (50%), Syrah (20%), Cinsault (20%), Mourvedre (10%)

  • Terroir

    Clay and limestone soils facing south / south-east. Located at the bottom of Luberon mountain.

  • Winegrowing

    Certified organic. Green pruning (disbudding). Early morning & mechanical harvests (2am-8am), to benefit from juices freshness, at optimal maturity for shiraz, in slighlty over-ripeness for Black Grenache. Yield : 45hl/ha, below the maximum yield allowed by the AOP (55hl/ha).

  • Winemaking

    Harvest selective sorting. Destemming with new generation destemmer (Oscillys from Bücher) then crushing. Direct pressing with pneumatic press. Separation of pressed and free-run juices (after tasting). Cold static settling for a minimum of 48 hours. 3 weeks mono varietal fermentation in stainless steel tanks (temperature of 15°C).

  • Aging

    Stainless steel tanks aging over fine lees until Christmas. Clarification by racking and filtration before bottling.

  • Tasting

    A symphony full of nuances and variations. The score begins with the blend of several times: very subtle notes of roses with notes of exotic fleshy fruits (peach, nectarine). The next measure offers an enveloping and round attack for a smooth first approach. It is then rising in intensity to finish by a fireworks of acidity, minerality and tension.

  • Wine &
    food pairing

    A generous and gourmet rosé made to be shared with friends. Delicatessen, grilled beef, red mullet fillets, salmon carpaccio, octopus salad, veal tajine... Here, place to the audacity, in any season. Because yes, thanks to its beautiful generosity, you can also pair this rosé on your most winter dishes. One watchword : D.A.R.E. !
