2017  Cuvée Fontenille White

  • Grapes

    Rolle (60%), White Grenache (20 %), Clairette (20 %)

  • Terroir

    Clay and limestone soils facing south / south-east. Located at the bottom of Luberon mountain.

  • Winegrowing

    Certified organic. Green pruning (disbudding). Early morning & mecanical harvests (2am-8am), to benefit from juices freshness, at optimal maturity for Rolle, White Grenache and Clairette. Yield : 40hl/ha, below the maximum yield allowed by the AOP (60hl/ha).

  • Winemaking

    Harvest selective sorting. Destemming with new generation destemmer (Oscillys from Bücher) then crushing. Direct pressing with pneumatic press. Separation of pressed and free-run juices (after tasting). Cold static settling for a minimum of 48 hours. 3 weeks mono varietal fermentation in stainless steel tanks (temperature of 15°C).

  • Aging

    Stainless steel tanks aging on fine lees until Christmas. Clarification by racking and filtration before bottling.

  • Tasting

    A bouquet of fresh white flowers, and exotic fruits (mango, peach), fully offered. Jasmine and hawthorn reign over a nose expressing hints of honey. The mouth is not left behind. It wants to be enveloping and gives the sensation of crunching a very fleshy fruit. The finish brings contrast to the whole by its tension and its minerality.

  • Wine &
    food pairing

    It's summer, the aperitif is behind you. A flan of vegetables marinated with olive oil and spices. The dish, a grilled fish, had a very tender flesh ... A basket of flowers and fresh fruits accompanied by a plate of goat cheeses will be a perfect dessert. Winter is far away! A summer wine that can also be paired with winter seafood platters.
